I did make it 6 days shy of 1 month Gluten Free - that's gotta count for something. And as this is all a self-imposed diet, it's not life and death if I fall off, though it's not pleasant and I have many more important battles into which I need to keep throwing myself, so I should conserve all my focus and energy for those instead of having to constantly climb back into the GFW - Gluten Free Wagon.
In honor of my struggle, and because it's been far too long since I posted about food, below is a recipe for the most delicious gluten free rolls ever. I make them all the time and finally figured out how to make them really really well here in NYC - the trick is to beat the eggs in by hand, as even 2 pulses with my hard-core blender waaaaay over blended them and made the batter much too liquid-y - not the proper consistency for delightfully fluffy rolls. Apologies for the lack of pictures.
Rolls
1 C dry curd cottage cheese*
1/4 C butter, melted
1/4 C honey (or more depending how sweet you want them)
1 tsp Baking soda
3 eggs
2 1/2 C almond flour (ground almonds**)
1. In a blender, mix the cottage cheese, butter, honey, and baking soda.
[If you don't have a demon blender, you can add the eggs and blend until just combined, but don't over do it, because then the batter will be much too liquid-y and then you'll need to add a ton more almond flour. I found I need to mix the eggs in by hand.]
2. In a large bowl, mix in the eggs if you haven't already, then mix in the almond flour. Get your hands wet and form dough into balls and place on greased cookie sheets.
[You can make them whatever size you want, but they do spread out. I normally make 12-15. And having your hands wet really cuts down on how much the dough sticks to you. It's very clinging.]
3. Bake at 350 degrees for 13-15 minutes.
These are great just on their own, or you can use them in place of regular flour buns. They are very filling and totally good for you.
*I looked at 11 different grocery stores here in NYC and couldn't find Dry Curd Cottage Cheese. I ended up buying Large Curd Cottage Cheese (which I've only found at 1 grocery - get it together, NY) and rinsing it off with water in a strainer - voila! Dry curd cottage cheese :) According to my sister, Farmer's Cheese can also be used.
**I've been able to find Ground Almonds at Trader Joe's (called Almond Meal). Places like Food Emporium and Whole Foods have "Almond Flour" that is like, $13 for 8oz - a ridiculous price, when what you need is just ground almonds.
